The Rodizio: Ready for Primetime?

I just had dinner at Midwest Grill, a Brazilian-style rodizio in Cambridge, Massachusetts. Service was spotty, but the food was good and, of course, the portions were enormous. I particularly enjoyed the plantains served as an appetizer and the subtly spicy linguica that came out along with ten other varieties of meat.

Growing up near Newark, NJ, a city whose Ironbound District boasts a large Brazilian population, I often wondered why the rodizio format hadn't spread nationwide. After all, by combining red meat with all-you-can-eat portions, rodizios satisfy two of American gastronomy's most basic urges. Furthermore, the Latin American theme that characterizes rodizios gives them a fun atmosphere that serves to accentuate the gluttonous experience.

In light of these observations, I wonder: is the nation ready for a restaurant empire that will do for the rodizio what Chili's has done for Tex-Mex?
